    MMMMM----- Recipe via Meal-Master (tm) v8.06

    Title: English Muffin Pizza
    Categories: Five, Appetisers, Breads, Cheese, Pork
    Yield: 12 Servings

    12 oz Pkg English muffins; split
    14 oz Can pizza sauce
    8 oz Shredded mozzarella cheese
    8 oz Sliced pepperoni
    4 oz Link cooked Italian sausage;
    - sliced

    Set oven @ 350ºF/175ºC.

    Arrange English muffin halves, cut-side up, on a baking
    sheet. Spoon 1 to 2 tablespoons pizza sauce onto each
    English muffin; top with mozzarella cheese. Place
    pepperoni slices on 1/3 the pizzas and Italian sausage
    on 1/3 the English muffins, leaving the remaining 1/3
    with just cheese.

    UDD NOTE: Double up (or more) on the pepperoni and the
    sausage and make sausage, pepperoni and cheese minis.

    Bake until cheese is melted, about 10 minutes.

    Title: Mexican Pita Pizzas
    Categories: Appetizers, Pizza, Breads
    Yield: 24 Servings

    4 Pita breads
    15 oz Can black beans; drained
    11 1/2 oz Jar Pico de Gallo; drained
    1 c Cheddar cheese; shredded
    1 c Monterey Jack cheese;
    - shredded
    2 c Lettuce; shredded

    MMMMM---------------------GARNISHES/TOPPINGS--------------------------
    Salsa
    Guacamole
    Scallions; sliced
    Black olives; sliced

    Heat oven to 375ºF/190ºC Place pita breads on a large
    baking sheet. In a medium bowl, combine beans and Pico
    de Gallo. Spoon over pita breads.

    Sprinkle each bread with cheeses.

    Bake 14 to 18 minutes or until heated through & cheese
    is melted. Top with shredded lettuce.

    Cut each into 6 wedges. Serve with salsa, sour cream,
    guacamole, scallions and/or olives.

    Title: Pita Pesto Pizzas
    Categories: Pizza, Cheese, Citrus
    Yield: 2 Servings

    2 cl Garlic
    1/2 c Light packed parsley
    4 c Torn spinach
    1/2 c Grated Parmesan
    1 1/2 tb Dried whole basil
    1 tb Lemon juice
    2 (6") Whole Wheat Pitas
    1 c Chopped red bell pepper
    1/2 c (2 oz) Shredded mozzarella

    Position knife blade in processor. Drop garlic & parsley
    through food chute with processor running.

    Process 15 seconds OR until minced. Add spinach, Parmesan,
    basil & lemon juice. Process 30 seconds. Scrape bowl with
    spatula & process an additional 30 seconds OR until smooth.

    Split pita breads into 4 rounds, spread 2 tb spinach mixture
    over interior of each pita round. Top with bell pepper &
    cheese.

    Bake At 450ºF/232ºC for 5 minutes OR until cheese melts.

    Serve Warm.
