    Title: Avocado Toast
    Categories: Breads, Fruits, Citrus
    Yield: 2 servings

    MMMMM-----------------------AVOCADO TOAST----------------------------
    2 sl (large) crusty, chewy whole
    - wheat sourdough bread
    1 Ripe avocado; halved,
    - pitted
    Extra-virgin olive oil
    Salt & coarse black pepper
    1/2 Lemon or lime

    MMMMM---------------------OPTIONAL GARNISHES--------------------------
    Poached or fried eggs
    Thin sliced pickled or fresh
    - red chilies
    Thin sliced pickled red
    - onions
    Pepitas or sesame seeds; or
    - both
    Herbs; such as basil,
    - cilantro, mint or baby
    - arugula

    Toast the bread to your liking. Meanwhile, use a wide
    spoon to remove the avocado halves from the peel,
    keeping them in large pieces.

    Drizzle the hot toast lightly with olive oil and
    sprinkle with salt. Let cool slightly, then place one
    avocado half on each slice of toast. Use the back of a
    fork to roughly mash the avocado into the bread, keeping
    it as chunky as possible.

    Sprinkle with a little more salt, and pepper if desired.
    Squeeze the citrus over the top and add any garnishes.
    Cut each piece of toast in half if they're large and
    serve immediately.

    Title: Banana Oatmeal Pancakes
    Categories: Five, Breads, Fruits, Nuts, Grains
    Yield: 8 servings

    2 c Complete whole grain or
    - multigrain pancake mix
    1 lg Firm banana, finely chopped
    1/2 c Old-fashioned oats
    1/4 c Chopped walnuts

    MMMMM---------------------OPTIONAL TOPPINGS--------------------------
    Sliced banana
    Mixed fresh berries
    Confectioners' sugar
    Whipped cream

    Prepare pancake batter according to package directions.
    Stir in the banana, oats and walnuts. Pour batter by 1/4
    cupfuls onto a hot griddle coated with cooking spray;
    turn when bubbles form on top. Cook until the second
    side is golden brown. Serve with desired toppings and
    additional chopped walnuts.
